Richard’s ideal client is “enthusiastic about wines and wishes either
to build a cellar or dispose of a cellar – and enjoys life.” Jessica says her
ideal client is “somebody who is interested in exploring wine, doesn’t have
preconceived notions about what is good or bad, and is interested in the
experience. Somebody who understands price isn’t always indicative of
value and vice versa.”
As for advice for people new to wine who want to explore and
develop their palate and cellar, “there’s a very simple lesson,” Richard
explains. “The lesson is: do not ever say you like a wine because someone
else says they do. In other words, if a wine is rated at 100, it is by no
means any indication [of what should be liked]. People get intimidated;
they think they have to like it because it’s got 100 points. If you prefer
a bottle of wine that costs ten bucks to one that’s 100 bucks, don’t be
embarrassed about it – it’s fine. It’s because you like it better. Don’t listen
to what other people say. Follow your own road.”
